Dry Cider
Our dry cider is crafted from heirloom apple varieties that are renowned for their rich tannins and spicy aromas. This cider is fermented and aged in untoasted Oregon white oak barrels to create a full-bodied dry cider with nice balance and complexity. This sophisticated cider will compliment a multitude of dishes.

Semi-Dry Cider
Our semi-dry cider is styled after the fine ciders of Somerset, England. Just shy of dry, this cider has just the perfect amount of residual sugar to bring forward the delicate fruit and light ginger spice. This cider has a nice delicate weight that finishes with ripe apple skin flavors. Notes of dried fruit, ripe pear, citrus and green apple make this a beautiful pair to fish, poultry, pork, barbeque, or by itself on the porch. Serve chilled.

Heirloom Blend Cider
Our heirloom blend is both refreshing and complex. This cider has a nice medium weight with a warm, smooth texture. A ripe fruit opening balanced by bright acidity and good tannin structure make this a delightful drink alone beverage, but is also a lovely pair for pork, cheese, poultry or vegetables. Beautiful ripe apple aromatics with warm brown sugar, light floral, and citrus notes. Smooth, warm finish with good length. We use only organically grown cider apples from our orchard in Salem and a few select Oregon orchards. We blend French and English cider varieties with heirloom North American heirloom varieties to get the right balance of acidity, tannins, and aromatics. Serve chilled.

Pommeau
Pommeau is a unique apple dessert wine. Select heirloom cider apple varieties were fermented and then distilled. The resulting apple brandy, after aged 5 years in oak, was expertly blended with fresh juice from cider apples that offer diverse character - those with a wealth of tannins and those with plentiful sugars. Pommeau is a delicately sweet, surprisingly smooth, aromatic wine with an incredible brandy essence. Serve chilled or warm and enjoy as an aperitif, a dessert or with a meal. Production of only 100 cases every other year.
